Mulled cider
Method 1
Ingredients
1½ l dry cider
7 tbsp Calvados
400ml apple juice
75g dark brown sugar
zest 1 orange, pared into strips
4 whole cloves
2 cinnamon sticks, broken in half
1 tbsp allspice berries
STEP 1
Pour the cider, Calvados, apple juice and sugar into a large saucepan, and gently heat to mull.
STEP 2
Add the orange zest and spices, bring to a simmer, then turn down and keep on a low heat for 20-30 mins. Ladle into glass mugs to serve.
Method 2
Ingredients:
- 1 gallon apple cider
- 2 oranges, sliced
- 1 lemon, sliced
- 4 cinnamon sticks
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice
- 1/2 cup brown sugar
- Rum or bourbon (optional)
Instructions:
1. In a large pot, pour the apple cider and add the orange and lemon slices.
2. Place the cinnamon sticks, whole cloves, and whole allspice in a cheesecloth or tea infuser ball and add it to the pot.
3. Stir in the brown sugar and bring the mixture to a simmer over medium heat.
4. Let it simmer for about 30 minutes, stirring occasionally.
5. Remove the spices and fruits from the pot and discard them.
6. Ladle the mulled cider into mugs and add a splash of rum or bourbon if desired.
7. Serve hot and enjoy!
